Anzac biscuits

This week I made some biscuits from the BBC Good Food Cakes and Bakes cookbook as follows:

Heat oven to 180 degC

85g porridge oats

85g desiccated coconut

100g plain flour

100g caster sugar

100g butter, melted

1 tsp golden syrup

1tsp bicarbonate of soda

Mix all the dry ingredients together except the bicarbonate of soda. Melt the butter and add the syrup. Mix the bicarb of soda with two tablespoons of boiling water and add to the butter mix.

Pour into the dry ingredients and mix well. PutĀ dessertspoonfuls of the mixture onto baking sheets and bake for 8-10 minutes until golden brown.
